Toffee & Chocolate Chip Cookies
Crispy on the outside and soft and gooey on the inside. Perfection.
Yes yes, we know we have already given you a cookie recipe. But this one has chocolate AND toffee
in it. And as we all know, if you add some toffee and chocolate into the mix, you take it to a whole
new level.
Ingredients
- 115g unsalted butter, softened
- 100g granulated sugar
- 100g brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 200g all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 100g Meltingly Delicious Gardiners Butter
Toffee
- 100g semi-sweet chocolate chips
Method
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly
grease it.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar
until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chop the toffee and fold in the toffee bits and chocolate chips until evenly distributed
throughout the dough.
- Using a ice cream scoop or tablespoon, scoop out portions of dough and place them onto
the prepared baking sheet, leaving some space between each cookie for spreading.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to
a wire rack to cool completely.
